Changing EXIF info

How do I change EXIF info that appears to have been uploaded directly from the photographers camera?

  EXIF data is not editable in PhotoShelter or even most image editing packages. There are various specialist software applications that let you do this but as I've never used them I can't recommend any specific one.

  I knew you can't edit it here - but is there a way to simply HIDE IT? There's a lot of unnecessary info!
